Healthy Dark Chocolate Cookies

Ingredients:
1 can 400g black beans, rinsed, drained and pat dried
4 tb natural peanut butter
1 flax egg (combine 3 tb water with 1 tb flax meal and set aside to thicken)
2 tsp vanilla extract
50g vegan dark chocolate, melted
100g coconut sugar, ground into powder using a coffee grinder or high-speed blender
80 g cocoa powder
½ tsp baking soda
½ tsp salt
Optional toppings: cocoa nibs/vegan dark chocolate chips


Instructions:
1. Preheat oven to 180° C.
2. Add beans, butter, flax egg, and vanilla to a food processor and blend until smooth.
3. Add melted chocolate and blend until combined.
4. Add sugar, cocoa, baking soda, and salt to a bowl and whisk to combine.
5. Add the dry mixture to the food processor and blend until well combined.
6. Form 14 balls, then press into discs and place on a parchment-lined baking tray.
7. Add toppings if using.
8. Bake until they have set up and have small cracks.
9. Allow to cool before serving.
